Chinese Fried Wheat*/Rice

This is a really yummy recipe if you are trying to incorporate wheat into your diet, or use up some old rice or wheat. And it tastes delicious.

2 Tbs. oil

2 c. coarsley chopped onion

1c. chopped bell pepper

2 c. left over meat (bacon, ham, chicken ,sausage, etc.)

2 c. cooked whole kernel wheat or rice

2 tbs soy sauce (or to taste)

1/2 tsp salt

2 eggsI

n a large skillet, saute onion and green pepper in oil . Then add meat and cooked whole wheat* or rice. Make a "well" in the center and add the 2 eggs. As eggs cook, slowly stir them into the wheat/ rice. When all of the eggs have been cooked and stirred into wheat/rice, add soy sauce and salt.** Cook whole wheat in water just as you would rice.
