Blueberry Struesel

Bluberry Struesel- 350 F. for 40-50 minutes

For the streusel:
1/4 cup granulated sugar
1/3 cup light brown sugar, lightly packed
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 pound (1 stick) unsalted butter, melted
1 1/3 cups all-purpose flour
For the cake:
6 tablespoons unsalted butter, at room temperature (3/4 stick)
3/4 cup granulated sugar
2 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon grated lemon zest
2/3 cup sour cream
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup fresh blueberries
Confectioners' sugar for sprinkling

For the streusel:
Combine the granulated sugar, brown sugar, cinnamon, and nutmeg in a bowl. Stir in the melted butter and then the flour. Mix well and set aside.

For the cake:
Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on high speed for 4 to 5 minutes, until light. Reduce the speed to low and add the eggs 1 at a time, then add the vanilla, lemon zest, and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, add the flour mixture to the batter until just combined. Fold in the blueberries and stir with a spatula to be sure the batter is completely mixed. Spoon the batter into the prepared (round, buttered) pan and spread it out with a knife. With your fingers,
crumble the topping evenly over the batter. Bake for 40 to 50 minutes, until a cake tester comes out clean. Cool completely and serve with powdered sugar.

Biscuits

2 1/2 c. flour
4 tsp bkg powder
1 tsp salt
1/2 c. cornmeal
3/4 c. margarine
1 c. milk (generous)

Mix all the dry ingredients. Add the margarine and milk. Stir well. Should be a doughy consistency. Drop spoonfuls onto a baking sheet, probably about 3 tbsp each. Bake at 400 f0r 15-20 min

Pancakes

2 eggs
1/2 c. oil
1 tsp salt
2 tbsp sugar
2 1/2 c. milk
3 tsp bkg. powder
1 1/2 c. wheat flour
1/2 c. white flour\1/2 c. cornmeal

mix all the ingredients. DO NOT OVER STIR!!! if too thick, add a little milk as time goes by. Cook on a griddle.

Bran Muffins

3 c. bran
1 c. boiling water
1/2 c molasses
2 c milk
1 tbsp lemon juice
1/2 c oil
1 c. raisins/dates
1/4 c brown sugar
1/2 tsp salt
1 tbsp bkg soda
2 1/2 c flour (1/2 wheat and 1/2 white flour)

Stir the bran and boiling water. Let sit until cool. Add molasses, milk, lmn. juice, oil, and the raisins/dates. Stir together, then add the brown sugar, salt, bkg soda, and flour. Mix well. Store in an air tight container over night. Bake at 400 for 20-25 min. Yield: 2 1/2 dozen.

Brown Sugar Muffins

1/2 c. margarine
1 c. brown sugar
1 egg
1 tsp. vanilla
1 c. milk
1 1/2 c. wheat flour
1/2 c white flour
1 tsp bkg. soda
1/4 tsp salt
raisins

Combine all the ingredients except raisins in a large bowl. (I like Bosch mixers, but kitchen aides are great too) make sure everything is well mixed, then add as many raisins as you like. Grease a muffin tin. Scoop about 3/4 of the way full for each muffin. Bake 375 for 15-20 min.

Variations:
nuts
brown sugar on top
dab of margarine in bottom of each muffin tin (adds a little 'pop')

Cheese Topping

This is a good topping for the bread stix recipe, but honestly, I don't think that it's worth it. I just like to make up my own spices to put on top, but this still tastes fine. I never really measure any of these spices out, just add as much as I think the mixture needs. You can keep or leave out any of the spices and it will still taste fine.

2 c. parmesan cheese
4 tbsp paprika
3/4 c. sesame seeds
2 tsp celery seeds
2 tbsp dry parsley
2 tsp garlic pwd
1 tbsp chili pwd

Mix all ingredients together.

Bread Stix

These bread sticks are really simple and yummy.

1 1/2 c. warm water
1 tbsp yeast
1 tbsp honey
1 tsp salt
4 c. flour

Dissolve the water, yeast and honey in a bowl. Add salt and gradually add the flour. May need more or less depending on how you like your bread, but a general rule is that the dough shouldn't stick to your hands as you are working with it.

Roll out onto greased or floured surface. Cut or roll into strips. Variations: stretch, twist, roll, knot, etc. Set on greased baking sheet. Spread melted butter on top of each stick. Sprinkle seasonings, or leave plain. Bake 400 for 12-15 min.

Some seasoning ideas:
Garlic salt and parmesan cheese
Minced garlice and cheese
cinnamon and sugar (can drizzle on a nice buttercream frosting)
fresh, chopped herbs and salt
