Pancakes

2 eggs
1/2 c. oil
1 tsp salt
2 tbsp sugar
2 1/2 c. milk
3 tsp bkg. powder
1 1/2 c. wheat flour
1/2 c. white flour\1/2 c. cornmeal

mix all the ingredients. DO NOT OVER STIR!!! if too thick, add a little milk as time goes by. Cook on a griddle.

Gluten-free version!!!
All the same ingredients, but in place of the wheat flour use:
1 c. Bob's Red Mill All Purpose Baking Flour
and
1/2 c. New Grains Gluten-Free Bakery All Purpose Baking Flour
also use 1/2 c. cornmeal instead of white flour

Makes tasty GF pancakes!
